Seeing him on a recent season of Feasting on Asphalt , the guy had become fairly thick around the middle. Then, on his episodes Iron Chef of America “Super Chef Battle” Alton suddenly looked a lot leaner.
Chef Alton Brown is no stranger to food. In fact, as host of The Next Iron Chef and Good Eats, he’s a well-respected authority on all things that go on in the kitchen. That’s why, when he decided it was time to lose some weight, he came up with four food lists that were instrumental in helping him drop a whopping 50 lbs, a weight loss that he’s been able to maintain for over two years.
Alton Brown weight loss plan has accomplished his goal by adding an easy trick to lose 50 pounds and creating his own four food groups:
- Daily: Fruits, whole grains, dark leafy greens, nuts, carrots, green tea
- 3 times weekly: Oily fish, yogurt, broccoli, sweet potato, avocado
- 1 time weekly: Red meat, pasta, dessert, alcohol
- 0 times weekly: Fast food, soda, processed meals, canned soups, “diet” anything
These foods should be a part of your daily diet. Whole grains, like oats, are rich in fiber so they fill you up and keep you satiated for longer. Also, soluble fiber keeps your cholesterol levels in check and lowers your risk of heart disease. And fruits, especially purple ones like blueberries, blackberries and Concord grapes are rich in antioxidants and resveratrol, known to promote longevity. To get these foods in every day, Brown freezes the berries into pre-portioned packets and either uses them in smoothies or just eats them as is. Additionally, nuts are a good source of protein and you can fit them in easily every day by eating a handful about 15 minutes before a big meal to help curb overeating.
What about exercises?
Alton Brown weight loss plan has included some exercises too. Brown says mixing things up with more than one type of exercise is the key. He also prefers exercising three times a day, rather than in one long stretch. Whatever you do, just move. “I don’t watch a lot of TV and I don’t play computer games, because I’d like to live to be 80 years old,” he says.
In many cases, Brown says , it’s not so much the foods themselves that are the problem, but what you coat, slather, sprinkle and fry them in. “What you would have to worry about is what you put on things.” He says by changing his eating habits, he reset his palette. Now when he eats a sweet potato, he enjoys it without the dollop of butter that used to top it. “You’d be amazed how delicious food really is. If you get your diet adjusted properly, your taste changes and you respond more to the natural flavors in things.”
Brown says the selection of the foods for each list came largely from the years of nutritional research he gleaned from his years doing Good Eats. The motivation to create a plan based on what to eat and how frequently to eat it came out of his personal needs and past experience.
Brown continues “Having wrestled with weight my whole life, I knew that a diet based on denial—based simply on don’t do this, don’t do that, don’t eat this, don’t eat that—would ultimately fail for me. I rebel against that. I knew if I was going to design a plan that had any hope of success, it would have to be based on not things I couldn’t eat but things I had to eat, because that’s more proactive.
“So I came up with this concept that there are a great many foods that are extremely high in nutrition that you ought to be getting every day, some things several times a week. And I balanced that with the things that did need to be restricted which is the once a week and never list, then I could find some things that I could live with.”
Desserts are now a one-day-a-week food. Those rare treats serve as motivators, making you look forward to them all week. “Anticipation is actually a very potent tool,” Brown said.

list 4 are foods you should cut out completely. Brown found that when he drank diet soda or ate processed foods, he would crave and eat sweet and processed things more often, contributing to his weight gain. And artificial sweeteners may be to blame. Studies have shown that artificial sweeteners can be addictive and put taste receptors into overdrive, causing the body to release more insulin – a hormone instrumental in storing body fat. So, instead, he stopped incorporating these foods into his diet altogether.
